The Sebastian Vail's visionary new restaurant, Block 16, is farm-to-table fresh, local and organic and a fine Vail restaurant. Elegantly refined, delightfully unpretentious, sometimes whimsical and always comforting. And that’s just the setting. Creations from Block 16 are seasonally inspired, using the best ingredients from the Vail Valley and further afield. The Sebastian's Executive Chef Sergio Howland combines these dishes with unique wines from small producers from all over the globe, and the restaurant offers a setting where diners can unwind, reconnect and celebrate at the mountain’s edge.
